Runny cheese anyone?

Need a snack to feed the masses in a hurry - how about a baked cheese? Super easy and super scrumptious with some toasted bread and a glass on wine - what could be better!

ROSEMARY & GARLIC BAKED CHEESE
Recipe by Alice Storey - Gourmet Traveller
1 round white-rind cheese (about 125gm), such as Camembert or Brie in a wooden casing if possible
30 ml chardonnay
1 garlic clove, thinly sliced
5 small rosemary sprigs

If you can find a wheel of cheese in its wooden casing, carefully remove the cheese and any paper, then line the wooden case with baking paper. Place the cheese back inside and bake. If no case is available use a ramekin or small oven proof dish so that it fits snugly.

Heat oven to 200 C.  Place the cheese on the baking paper, pierce top of cheese 5 times with a small sharp knife, stud each hole with a slice of garlic and a sprig of rosemary, drizzle with wine. Then bake until the cheese is slightly golden and very soft (10-12 minutes, depending on the type of cheese). 

Cool slightly and serve with crackers or a toasted artisan bread like ciabatta or walnut bread.
