Well it's getting to that time of year again when the Christmas mayhem kicks in. I've been testing a little cocktail or two for the Christmas season using some of the Six Barrel Soda syrups, and think this one is a real winner. It will get you in the mood to sing Christmas Carols plus the colour just screams Christmas - don't you think?

POMEGRANATE & MINT COCKTAIL
Adapted from a recipe by Dixie Elliot - Mindfood
⅔ c vodka
⅓ c Six Barrel Soda Cherry & Pomegranate Syrup
⅔ c pomegranate or cranberry juice
1 fresh pomegranate
crushed ice
300 ml lemonade
mint leaves to garnish

Combine vodka, syrup and juice in a jug. Add crushed ice to each glass followed by the pomegranate seeds. Pour the vodka mixture over the ice, top up with lemonade and finish with mint leaves.

You may want to play with the proportions of vodka, syrup and juices to suit your taste, plus for a less sweet cocktail exchange soda for the lemonade.
